Corner House Zucchini Bread
Yield: 7 loaves
Ingredients:
20 eggs
2 cups brown sugar
10 cups white sugar
6 cups vegetable oil
½ cup cinnamon
12 cups shredded zucchini
2 Tablesp. Salt
½ cup vanilla extract
18 cups flour
2 Tablesp. Baking soda
1 ½ teasp. Baking powder
Method:
In electric mixer, beat eggs well, add
sugars, oil, cinnamon, salt, vanilla
extract and flour, then the baking soda
and baking powder.
Note: Mix
in the baking soda and baking powder
after adding about half the flour.
Pour into
greased bread pans. Bake at 325 degrees
for about an hour, or until depressing
lightly near the middle with a finger
leaves no impression.
